Black Cherry Wine Cake


On August 19th I celebrated my [REDACTED] birthday with my friends, so I made a cake for the occasion. The base is a red wine cake, my absolute favorite, with some personal touches: instead of normal boring red wine I used my homemade black cherries infused wine and (also homemade) black cherry jam! My friends and family seem to have enjoyed it very much so I decided to share the recipe with you all! If you don't have access to cherry wine don't despair, you can use normal red wine! The cake is not alcoholic because the alcohol will evaporate while baking.

Ingredients:
1) Preheat your oven at 170C
2) Sift the flour, 15 grams of the cocoa, the baking powder and put aside
3) In a pot put the butter (cut in small pieces), the wine, sugar and 60 grams of the cocoa powder, then cook on low heat until everything is well mixed and you obtain a thick syrup.
4) Save a glass of this syrup (about 150 grams), then put the remaining liquids in a bowl.
5) Now you add the eggs one by one (add an egg, mix well then add another) until well incorporated;
6) Now you add the dry ingredients and mix well
7) Bake the cake for 35 minutes, time could vary so remember to do the knife test befor turning off the oven!
8) Once the cake is done let it cool down
In the meantime you can make your whipped cream and let it rest in the fridge!

9) When the cake has cooled down you can cut it in half and start with the filling
10) Wet both sides of the cake with your liquid of choice, I used a mixture of 1 part cherry wine, 2 part water and sugar to taste. You could use cherry juice, your liquor of choice or simple sugar water!
11) Pipe a ring of whipped cream, then spread the jam and cover with the other half.

Now it's time to decorate! You can either use only the glaze you saved earlier or go wild with your imagination! In my case I made some sad sad rosettes with the whipped cream and added my homemade drunken black cherries.
And ... voila! Now your life is a little sweeter! Happy baking!
